Peanut butter and blossom honey cheesecake with caramelised banana

This is one of ‘Clarkes’ favourite signature dishes, created to celebrate local honey.  It’s fairly simple to make, and with unusual ingredients, stimulates the mind as well as the mouth! Why not try it at home, or come along and try ours!

INGREDIENTS For the base

  • 5 oz Butter, melted
  • 1 Packet of good quality chocolate chip cookies, blitzed

 

INGREDIENTS For the filling

  • 1 ½ lb Hard cream cheese
  • 1 Jar of Blossom honey (or use your own favourite style)
  • 1 Jar of peanut butter (smooth)
  • 1 pt Cream, whipped to soft peaks
  • Icing sugar, to taste
  • 1 Banana
  • Brown sugar

 

UTENSILS

  • Food processor
  • Hand whisk, preferably electric
  • Mixing bowl
  • 12” Cheesecake tin
  • Greaseproof paper
  • Scissors / knife
  • Wooden spoon

 

METHOD for the base

  • Place butter in microwave until melted, place cookies in food processor and blitz until fine, mix the two together in a bowl.
  • Line 12” cheesecake tin around sides with oil, then cut out a strip of greaseproof paper and place around the edges.
  • Fill the bottom of the tin with the cookie mix and push down until flat.

 

METHOD for the filling

  • Empty peanut butter and honey into a mixing bowl and whisk together until smooth.
  • Add cream cheese and whisk again.
  • Taste the mix it should be equally balanced with salty peanut butter and sweet honey.  Whisk the cream to soft peaks and fold in.
  • If it needs more sweetness add icing sugar.
  • Place in fridge to chill.
  • Slice banana, sprinkle with brown sugar and caramelise under the grill or with a blow torch until golden brown.  Place on top to serve.
